LIFE WITH CAKE – Cherry Almond Cake

His recipe is so romantic and dreamy. I love to bake this cake when I have my friends over for a girls’ night in. Almond is one of my favourite foods, it’s so beneficial and fragrant. Cherries on the other hand, add sweetness to the subtle taste of almonds. This cake is what you would call salty and sweet.

You will need:
For the cake:

  • l 2 1/2 cups flour
  • l 1 1/2 cups granulated sugar
  • l 3 teaspoons baking powder
  • l 1/2 teaspoon salt
  • l 1/2 cup butter, softened
  • l 1/2 cup milk
  • l 1/4 cup of cherry juice
  • l 16  cherries, finely chopped
  • l 4 large egg whites

For the cherry filling/frosting:

  • l 4 sticks butter, softened
  • l 8 cups icing sugar
  • l 4 tablespoons cherry juice
  • l 4 tablespoons heavy cream
  • l 1 teaspoon almond extract
  • l Few drops of red food colouring (optional)
  • l Cherries, drained and dried for decorating
  • l Sliced almonds for decorating

1-Mix together the cake flour, sugar, baking powder and salt in the bowl. Add the softened butter, milk and cherry juice. Beat on medium speed for 2 minutes. Fold in the chopped cherries, then add the egg whites.

2- Grease and flour two 9″ round cake pans, then add the mix into the two pans.

3- Bake at 350 degrees for 25-30 minutes, or until the cake springs back when you touch the center of it. Allow the cakes to sit for 5 minutes, then remove them from the pans to a wire rack to cool completely.

4- Now to prepare the filling/frosting. Whip the butter for 2-3 minutes until it is almost white in colour. Add in the powdered sugar, cherry juice, heavy cream and almond extract. Add a drop or two of red food colouring if you’d like the cake to be a little pinker. Beat on low speed for 2-3 minutes.

5- Put a layer of filling/frosting on top of the cake, then place the second cake on top of the filling/frosting. Make sure the cake is cooled and the filling is smooth.

6- Decorate your cake with cherries and almonds to make it not only taste good but look beautiful.
