Since May is the month of special birthdays to me – it’s my husband’s birthday, my first baby girl’s birthday and I am expecting my second child in May too – I decided to make a birthday themed cake this month. This particular cake contains vanilla, chocolate, Oreo, cookies, sprinkles, ice-cream, brownies and hot fudge. All the good things in life! It’s one of my favourite flavours, if not my number one favourite ever!
You will need:
1 cup icing sugar
2 teaspoons vanilla extract
1 1/2 cups flour
1 3/4 teaspoons baking powder
1/2 cup milk
Crushed Oreo cookies
Readymade brownies or chocolate cake (cut into small cubes)
Chocolate and vanilla ice cream (to be used as filling and topping)
Hot fudge sauce
1- Preheat oven to 180 degrees C. Grease and flour a 23cm x 23cm cake pan.
2- Cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla extract.
3- Combine flour and baking powder, add to the creamed mixture and mix well.
4- Stir in the milk until mixture is smooth. Add the Oreo cookies, brownies, and sprinkles to the mixture. Pour into the prepared pan.
5- Bake in a preheated oven for 30 to 40 minutes. The cake is done when it springs back to the touch.
6- Let your cake rest and cool for an hour then slice it for filling.
7- Mix the vanilla ice cream with Oreo cookies, brownies and sprinkles then start filling the cake.
8- Finally, cover your cake with chocolate ice-cream (make sure it’s creamy and soft) keep it in the freezer when done, covering until serving. Add garnish right before serving and serve with hot fudge sauce on the side.
You get messy and creative with the decorating – I tried this recipe to make cupcakes and discovered that kids loved them more!
