This month’s recipe is so simple yet tastes so scrumptious. Ginger is one of my favourite ingredients; there is something in the flavour that says ‘cozy’ and ‘winter’.
Ginger Cake has been my family’s favourite ever since I first made it. If you are spending this winter season at home with your loved ones, try this recipe and spread more love and warmth to your gatherings.
You will need:
- 1/2 cup white sugar
- 1/2 cup butter
- 1 egg
- 1 cup maple syrup
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 cup hot water
- 1 cup condensed milk
- zest of one lemon
1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch pan.
2.In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the maple syrup.
3.In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger and lemon zest. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
4.Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.
5.Finally, pool on the condensed milk before serving for extra sweetness.
6.Optional: You can serve with French vanilla ice-cream on the side or top with whip cream and add more zest and cinnamon for garnish.
My personal favourite is adding a drizzle of warm condensed milk and a drizzle of honey on top.
